Plant milks are becoming more prevalent in the diet, not just by those who are fed with raw or vegan food, but by all the others who want a healthier alternative to animal milk. They are made from a variety of nuts, seeds and grains: almonds, hazelnuts, cashew nut, hemp, oats, coconut, etc… The process is simple and almost the same in all of them.
- 100 g of almonds
- optional sweetener (honey, maple syrup, corn syrup or agavin 4-5 dates)
- 1-1.5 liter of water
Almonds should be soaked in water for at least 6 hours (or overnight) to swell and soften. The water should be changed several times in order to be fresh, and it should not be consumed.
Peel the almonds (this takes about 30 minutes, so plan accordingly if you want the drink to be ready at a certain time). Paste the peeled almonds with sweetener in blender and add 300 ml of water. Mix until you get an equal creamy mass. Then add the rest of the water and mix for a few more minutes… and the milk is ready -- enjoy!
Almond milk can be stored in the fridge in a glass bottle or jar and it can stay stored for approximately 3 days. Enjoy!
