Green beans are very nutritious and healthy vegetables. It belongs to the group of legumes. Originally comes from Mexico. Besides corn and pumpkin, green beans were the main food of ancient civilizations. Green beans were brought (Phaseolus vulgaris) in Europe by the Spaniards in the 16th century. Because of their biological and medicinal ingredients, green beans are highly recommended for consumption. Today green beans are used as food almost everywhere in the world.

Green beans are low calorie vegetables and contain an average of 90% water. 100 grams of green beans has only 42 calories, 2.2 grams protein, 0.2 grams of fat and 7.6 grams of carbohydrates. Minerals and vitamins take the biggest part in the nutrition value of the green beans. In 100 grams of green beans has 52 milligrams of calcium, 45 mg phosphorus, 0.7 mg iron, manganese, cobalt, nickel, zinc… They also contain carotene (provitamin A), vitamin B1, B2, B6, C and E.

There are many varieties of beans and some of the more famous are: Tiber, Neri, Lodi, fruidor, unidor, Chinese green beans, Italian green beans…

There is a separation of high and low varieties. Low varieties are grown more because it is cheaper to grow them and because they provide higher yields. The color of the green beans can be green, pale yellow, yellow or multicolored. Their length -- long, medium or short and when it comes to their shape, they can be pointed, round or broad.

Fresh green beans on the market are available from spring to autumn. Frozen, canned and dried green beans can be found in stores throughout the year.

Green beans contain various beneficial nutrients and medicinal ingredients: arginin, copper, protein, carbohydrates, fats, fiber -- cellulose, B vitamins, vitamins C, E, K, PP, iron, inositol, potassium, calcium, cobalt, magnesium, manganese , mineral salts, sodium, nickel, saponins, selenium, folic acid, fluorine, phosphorus, zinc…
