- Half a cup of vinegar
- 900 to 1350 grams of chicken backs
- ¾ of a cup of small pasta
- 2 bouillon cubes
- 2 scrambled egg yolks
- 2 tablespoons of copped freshly parsley
- 4 liters of water
Method of preparation:
Boil the chicken back (chicken wings are also a good choice) in an open bowl for about 2 hours. Strain the soup and discard the fat.
Separate the meat from the bones and add the meat, pasta and bouillon cubes into the water. Allow the soup to reach a boiling point and cook for another 10 minutes afterwards. Put the bowl away from the fire and immediately add the scrambled egg yolks and mix well. Finally add the parsley and serve.
This is highly healthy soup, low in calories and is introducing calcium in your diet.
